Nori Roll

Nori Sheets
Pumpkin Seed Pate
MicroGreens
Grated Carrot
Cucumber Sticks (sliced thin)

Spread the Pumpkin Seed Pate on ¼ of the sheet of Nori.  Add the Cucumber Sticks, Grated Carrot and MicroGreens.  Roll up.  Seal the roll by dipping your finger in water and running it along the length of the edge of the roll and pressing it together.

Pumpkin Seed Pate*

2 C pumpkin seeds, soaked overnight and drained
½ sun-dried tomatoes, soaked
2 T olive oil
1 T fresh parsley, finely minced
1 T lemon juice
1 tsp. fresh oregano, finely minced (or ¼ tsp. dry)
1 tsp. fresh thyme, finely minced (or ¼ tsp. dry)
½ tsp. Sea Salt
